Founded in 1925, Mikasa adapted the then-rare Western cuisine to suit Japanese tastes. By creating various Yoshoku dishes such as curry rice, doria, and beef stew, Mikasa gained widespread popularity and became a leading force in shaping Japan's Yoshoku culture.

Yoshoku is a style of cuisine rooted in Western dishes but uniquely developed in Japan. Around the 1930s, Western dishes were adapted to suit Japanese tastes, creating a fusion style called Wayo Setchu Ryori, which later became known as Yoshoku. Dishes such as curry rice, omurice, and hamburg steak, featuring unique Japanese twists not found in traditional Western cuisine, have since become iconic representatives of Japanese cuisine.
